Stir-Frying Tips from CookSmart

USA Weekend’s Pam Anderson gives stir-frying tips in response to a reader’s question:

1. Use a wok or a skillet with a large surface (eg., 12 inches).
2. Heat the empty skillet over high heat before adding cooking oil. Keep the oil from spattering by tilting the pan away from you as you add the ingredients.
3. Add the ingredients in stages. Otherwise they will be steamed, instead of stir-fried.
