Slow Cooker Barbecue Chicken
Summer and barbecues go together. Even on a busy day, you can still enjoy a good barbecued chicken without having to fire up the grill. How? Using a slow cooker, of course. This recipe for Slow Cooker Barbecue Chicken uses just 5 ingredients, and almost no prep work.
Slow Cooker Barbecue Chicken
8 to 10 skinless chicken thighs
1 cup (250 mL) barbecue sauce
1/2 cup (125 mL) apricot jam
1 tbsp (15 mL) Dijon mustard
1/8 tsp (0.5 mL) hot pepper sauce
Place chicken in a 4 quart (4 L) slow cooker. Combine remaining ingredients and pour over chicken. Cover and cook on low heat setting for 6 to 7 hours or until chicken is cooked through. Serves 4.
When I’m using my slow cooker for barbecues, I like to pop the cooked meat under the broiler for 5 minutes. It gives it a real barbecue flavor, while retaining the moist and tender interior from the slow cooking.
