Recipe: Texas Caviar
Last weekend, we had a joint birthday party for my son and his cousin. As an appetizer, I prepared this dip for tortilla chips. It’s called Texas Caviar, and is honestly one of the best dips I’ve ever tried. I got the recipe from a friend of mine, who brought it to a girl’s night out a few weeks ago. I’m calling this Jodie’s Texas Caviar.
Jodie’s Texas Caviar:
Sauce:
1 tsp. salt
1/2 tsp pepper
3/4 cup vinegar
1 cup sugar
1/4 cup canola oil
Boil together above ingredients until sugar is dissolved. Set aside.
Dip:
Combine the following:
1 can pinto beans, rinsed and drained
1 can whole white corn, rinsed and drained
1 can black-eyed peas, rinsed and drained
1 cup diced green pepper
1 cup celery chopped
1 small onion chopped
1-3 tablespoons jalapeno pepper chopped
1 small jar pimento
Pour sauce over other ingredients. Refrigerate overnight. Drain to serve. Serve with tortilla chips.

I only used about half a teaspoon of very finely chopped jalapeno, to keep the heat level down. You could, of course, adjust it according to your own taste. The only thing that went wrong when I served this was that we ran out of chips early!

Jodie’s Texas Caviar………..this recipe was wonderful! Everyone loved it. Only question is, the marinade itself was a lot and I had to pour it off the “caviar” after it sat overnight.
Overall, a terrific recipe that I will make again and pass on to friends.
