Preparing for Thanksgiving

This morning, I got a call from hubby’s cousin, inviting us to their home on Thanksgiving Day. For several years now, she has hosted the clan celebration for this holiday. I truly admire the woman. She can cook. She can cook well. She can cook for the numerous extended families that make up the clan. And she can do it by 12 noon!

I remember the first time I roasted a Thanksgiving turkey for my in-laws. I made the classic mistake of not removing the various extras that are stuffed deep inside the cavity. (Hey, how was I to know they were there? Besides, it was a huge turkey and the gizzard, etc. were in really deep.) Well, I know better now, but I still don’t think I can pull off the entire Thanksgiving dinner on my own. I’ve asked our cousin how she does it, and it all comes down to planning, every time. Preparations start several days before the gathering.
