Pancakes!

I LOVE PANCAKES!
I don’t get to have them for breakfast as often as I want, but when I do get the chance, I enjoy them quite a bit. “Breakfast food” is a welcome treat at any time of day.

That’s what we love about pancakes: Dress ‘em up or dress ‘em down, they are tender, warm and filling _ the ideal comfort food.
Most of the pancakes I make these days come from boxes. I’d like to try out from-scratch recipes, including ones that are milk-free and egg-free.
For starters, I’ll try the basic pancake recipe from The New Joy of Cooking, posted by Michael Chu (Cooking for Engineers) way back in 2004. There are some helpful suggestions in the comments section of his post as well.
