Microwave Ovens: The How’s and Why’s
It’s a convenience that we often don’t give a second thought to. It has revolutionized the way we cook and keep hot meals on the table. But a lot of science has gone into the microwave, a basic appliance of the modern kitchen.
Some facts about the microwave oven:
* The very first microwave oven was almost 6 feet tall and weighed more than 750 pounds.
* Microwave ovens don’t exactly cook food from the inside out. Instead, cooking starts just below the surface of the food, and spreads both inward and out.
* It is possible for superheated water to boil explosively upon agitation, such as when you take it out of the microwave. BUT this only happens if you heat water in a perfectly smooth container and nothing disturbs its surface during heating. To be safe, place a wooden object, such as a chopstick, in the water to provide a surface around which boiling can begin.
