Menu Ideas for Campers

As summer progresses here in the U.S., the thoughts of many turn to family traditions of camping, hiking, and generally just enjoying the great outdoors. One of the things to think about is food, of course. Though “roughing it” brings its own fun,it also presents unique challenges to cooks.

If you’re going to go camping this summer, you don’t have to forget about eating well if you plan your menu ahead of time. Here are some suggestions:

* Make a spice kit using small plastic jars, available in camping-supply stores, or zipper-seal plastic bags.

* For breakfast, mixes for pancakes and skillet cones, paired with maple syrup, are a great choice. You can make your own mixes by combining the dry ingredients at home and packing them in plastic bags.

* Lunch and dinner options: pasta, rice, polenta, and beans cooked with pantry items such as tomato paste, dried mushrooms, bouillon cubes, and dried herbs and spices.

* Other foods: hard cheeses with thick rinds, preserved meats like salami, pita bread and flour tortillas, citrus fruits and hardy vegetables, such as onions, garlic, potatoes, and jalapenos. Check out your local grocery for non-refrigerated items. Make sure the expiration dates are after your camping trip is over.

* Some menu suggestions: Make a red-onion-and-orange salad, squeeze lemon over sauteed fish, make spicy home fries, or use onions, garlic, and chiles in pasta or a vegetarian chili.

* For snacks and desserts, bring chocolate bars, cookies, dried fruit, and nuts.
