Kid-tested School Lunches

BrownBagLunchWhen I was a grad student, I was frequently at a loss about what to pack for lunch. I almost always ended up with deli cuts sandwiched between bagel slices, sometimes garnished with tomatoes, sometimes not. It was easy to make and kept well enough until lunchtime. Besides, it beats having to eat grilled burgers and greasy fries.

I was easy to please, but younger students may be more difficult to pack lunch for. If you have a few standard sandwiches that you rotate, a variety of “lunch fillers” may make them even more appealing to your kids. Here are some kid-tested lunch ideas from the San Francisco Chronicle:

– Store-bought vegetable sushi
– Edamame
– Steamed sugar snap peas
– Pita chips with hummus
– String cheese. Make roll-ups by wrapping with turkey or ham.
– Savory or sweet mini kebobs. Skewer alternating cheese and lunch meat, or mixed fruit, on toothpicks.
– An avocado half with sea salt. Keeping the pit in the avocado half will prevent browning. Serve salt on the side.
– Homemade fruit salad.
– Baby carrots with ranch dip
– Rice crackers or rice chips
– Trail mix.
– Oatmeal cookies

The San Francisco Chronicle also has recipes for the following, all of which were given passing grades by their school-aged tasters:

- Corkscrew Pasta Salad with Edamame, Red Peppers & Crunchy Noodles
- Mini Pita Pizzas
- Sweet Potato Burritos
- Quinoa for Kids
- Chicken Nachos
