In Search of the Perfect Pumpkin Pie

Seeing that no one in our house likes pumpkin pie except me, I usually go in search of the tiniest pie I can find as I’m the one who is going to eat all of it. It’s a hardship I know, but for those of you who actually put aside time to bake one of these gorgeous creations for Thanksgiving, I thought that I would go looking for the most delectable recipes I can find.

    Quick and easy: I usually use cinnamon and nutmeg since I didn’t want to buy ginger.

    Pumpkin Patch ‘Pie’

    Ingredients
    2 2/3 cups cold milk
    2 pkgs (4 serving size) instant vanilla pudding mix
    1 can (15 oz) solid-pack pumpkin
    1 tsp ground cinnamon
    1/2 teaspoon ground ginger
    Graham cracker crumbs
    1 can whipped topping

    *1 gallon Ziploc freezer bag
    *25 small cups
    *25 spoons
    *scissors

    Directions
    Combine the milk and instant pudding *in the ziploc bag
    *Remove the air and Ziploc shut
    *Squeeze and kneed with hands until blended for 1 minute
    Add the pumpkin, cinnamon, and ginger
    *Remove the air and Ziploc shut
    *Squeeze and kneed with hands until blended for 2 minutes
    Place 1/2 tablespoon of graham cracker crumbs in the bottom of small cups
    *Cut corner of gallon freezer bag and squeeze pie filling into cups
    Garnish with whipped topping

    Sorry, I forgot to say that this is a ‘teacher’ recipe designed to be made in the classroom, but I make it for me and my DH in a bowl, too.
