How to Cook Fish

Cooking fish is quite easy, but there are a few tricks to it.

Fish has its own challenges. It has to be cooked through, but tender and flaky, not mushy. There is also the issue of complementing the taste of the fish. But with the great variety available, it’s a good, healthy and tasty alternative to meat.

AOL Food has a great collection of tips for preparing fish. Included are how to buy and store fish; and how to bake, grill, fry, broil, and poach. At the end of it, there are recipes to try.

Here are just some of the tips you’ll find there:

* The freshest fish have glistening fins, and clear (unclouded) eyes. It shouldn’t smell "fishy" at all.

* For safety reasons, don’t thaw frozen fish at room temperature. Thaw it the refrigerator overnight; in cold water for 1-2 hours, or on the defrost setting of a microwave.

* For baking, pre-heat the oven. Make several shallow cuts into the fish’s flesh before brushing with oil or butter keep it moist.

* When grilling, keep the grill well oiled to prevent the fish from sticking.

* For frying, use a heavy pan, preferably cast iron with high sides.
