Homemade Granola Recipe

I love granola, but I don’t buy it often because of the nuts that are commonly included. I was therefore motivated to try out a recipe for homemade granola that I found at Slashfood.

Here’s my first try, a simple combination of easy-to-find ingredients. Nut-free, dairy-free and completely healthy and delicious!

Homemade Granola

3 cups rolled old-fashioned oats
1/4 cup sesame seeds
1/2 cup dried shredded coconut
3/4 cup raisins
1/2 cup freeze-dried mangoes
1/4 cup canola oil
1/2 cup honey

Mix the oat, sesame seeds and coconut in a large bowl. Add the oil and honey, and toss until everything is evenly coated. Bake at 300 degrees for 30 minutes, stirring every 10 minutes. Return to the bowl after baking. Add the rest of the ingredients and toss to combine. Cool, with occasional stirring.

In my first attempt, I forgot to toast the coconut. But it turned out just fine (you can see the white stuff in the photo… that’s the coconut!). What’s great about this recipe is that it’s totally customizable.  Don’t like coconuts? Leave it out. I added the mangoes, which I just had around. You can use chopped dried apricots, craisins, or whatever you have on hand.

This is a great topping for yoghurt, or as a grab-and-go snack throughout the day.
