`Food, Dollars and Sense’: A College Crash Course
Maryville College, a private college located in Tennessee, is offering “Food, Dollars and Sense” as part of their January Term, a three-week academic session between the fall and spring semesters. Although classes taken during “J-Term” are credited toward a student’s general education requirements, these are not like usual college classes, and may instead take a more practical turn. Consider course titles like “Fit for Life” and “Wilderness Medicine”.
From the college’s course description of the cooking course:
This course puts students in a chef’s hat and takes them into the kitchen, where they will learn the principles of food preparation and presentation, as well as analyses of food economics and consumer trends. Everyone will dine well on food prepared in class.
Other colleges and universities should consider setting up programs like this. Maryville College junior Daphne Ternoir, who is taking “Food, Dollars and Sense”, says it well:
“It’s good to be able to have skills,” she said.
