Back to School Lunches
Lately, most of the ads have revolved around a back-to-school theme. New outfits, the latest computers and calculators, trendy dorm furniture. Even my car dealer is offering back-to-school deals on maintenance packages.
One of the best ways to prepare for the new academic year is to rethink our approach to school lunches. With childhood obesity and its accompanying dangers on the rise, it’s important to keep an eye on what our children eat at school. The best way to do this, of course, is to make healthy lunches that they will actually want to eat.
My time to make school lunches is still a few years down the road. But I do remember the lunches I enjoyed as a grade schooler. I particularly liked chicken salad sandwiches (still do!) paired with a cold thermos of orange juice. To make extra special chicken salads, add celery, or grapes and walnuts (check for allergies first though). I’ve seen the latter called “Gourmet Chicken Salad”. You can tell your kid that if you ever make this for him. ;)
