Allergy-Free Baking

Birthdays mean birthday cakes. Even for the milk-, egg- and wheat-allergic.

My sons are both allergic to these ingredients. Before I found out about the alternatives available at our local Foods for Living store, I’ve tired myself out trying a lot of cake recipes. I’ve had several failures and one success. So I’m grateful for the vegan and wheat-free baking mixes that are now available.

Last week, for my son’s actual birthday, I made the Vanilla Cake from Namaste, frosted with a simple icing adapted from Wilton’s recipe. I didn’t put a filling between the 9″ layers. That was a good thing, because the cake itself turned out to be a little sweeter than we prefer. It also had a bit of an aftertaste. But the kids (and the adults) seemed to like it. So it’s a thumbs up.

For my son’s birthday celebration tomorrow, I’m using the Spice Cake mix, also from Namaste. I added a cup of shredded carrots to make it a carrot cake, according to the instructions. It’s cooling in the kitchen as I type. I’ll again frost it with the Wilton icing, complete with decorations.

I’m no expert cake decorator, but so far, my firstborn’s been ecstatic about my creations. The photo above is of the cake I made for him last year. I’m still thinking whether to do a train theme tonight, since I do have the toppers. Or, go with the Winnie the Pooh invitation. I don’t have Pooh toppers, so I’ll have to think up some type of matching decoration if I go with that.

I’ve got to see if the cake’s cool enough. I’ll tell you how it turned out at a later post. :)
