30-Minute Dinners by Aurelia Williams

Rachael Ray isn’t the only one doing 30-minute dinners. Aurelia Williams - wife, mother, friend and coach - has them too. On her blog, she shares three of her all-time favorite quick meals. I’m reproducing the first one, Baked Honey-Mustard Chicken, here:
Baked Honey-Mustard Chicken
3 tablespoons honey
3 tablespoons yellow mustard
8 chicken thighs, rinsed and patted dry
salt
freshly ground pepper
2 cups fresh bread crumbs
1/4 cup Italian herb seasoning mix
Heat oven to 350F. Combine honey and mustard in a small bowl. Brush over chicken thighs. Season with salt and pepperCombine bread crumbs and seasoning mix on plate. Roll chicken in crumbs to coat. Place chicken thighs in a greased baking pan. Bake until juices run clear, about 30 minutes.
Visit Aurelia’s blog for the recipes for Polly’s Turkey Pasta and Spanish Baked Fish, which you can make in 30 minutes or less!
Happy homemaking!
